  Calf sweetbread is the term used in cooking for the gland "thymus" of the calf.
This one is situated in the entrance of the breast of the calf and is of use to it for digesting the milk. The gland disappears then in the adulthood.

The calf sweetbread is a part of the finest giblets in flavor and it is noble and uncontested king.
